Cauliflower Keema

This is my hubby's  favorite. After I got tired of all kind of Cauliflower dishes, I happened to remember my amma's Keema receipe:) It goes well with Rice, Chapathi or Idly.

Ingredients:

Cauliflower                - 1 (medium)
Onion                         - 1 (big)
Tomato                       - 2 (big)
Ginger garlic paste     - 1 tsp
Chilli Powder             - 1 tsp
Coriander Powder      - 1/2 tsp
Curry leaves               - a spring
Coriander or Cilantro - 2 tbsp (chopped)
Salt                             - to your taste
Oil                              - 3 tbsp
Cinnamon Stick         - 1
Cloves                        - 2
Fennel Seeds              - 1/4 tsp
Bayleaf                       - 1
Cardamom                  - 2


Method:

  1. Finely grate the cauliflower.
  2. Add 1 tbsp of oil and fry the grated cauliflower in a low flame.
  3. When the cauliflower starts turning into golden brown , switch off the flame and tranfer it into a plate.
  4. Add 2 tbsp of oil add the Fennel seeds, after that add Cinnamon, Cloves, Bayleaf and Cardamom.
  5. Cut the onions into small pieces and add it.
  6. Fry the onion in medium flame until they become translucent.
  7. Now cut the tomatoes into small pieces and add it.
  8. Fry the tomatoes until the oil separates from it.
  9. At this stage add Salt, Chili Powder and Coriander Powder.
  10. Cook until the raw Chili Powder smell goes away.
  11. Now add the fried cauliflower and sprinkle some water.
  12. Cover the pan and cook it in a medium flame for 10mins.
  13. At last add the curry leaves and Coriander and switch off the flame.




Sweet Potato Fritters

Sweet Potato Fritters is a quick snack.: Try it with your evening cup of coffee or tea , you will love it :)



Ingredients:

Sweet Potato     - 2
Olive Oil           - 2 tsp
Garlic Paste      - 1/4 tsp (Optional)
Pepper Powder - 1 tsp
Chili Powder    - 1 tsp
Salt                   - 1 tsp or to your taste



Method:


  1. Preheat the oven at 450F.
  2. Peel  the sweet potatoes and cut them into pieces (like French fires).
  3. In a bowl mix all the ingredients ( olive oil, garlic paste, pepper powder, chili powder and salt) and make it as a paste .
  4.  Add the sweet potatoes to the paste and mix well.
  5.  In a tray spread the sweet potato pieces and sprinkle some oil and bake it.
  6. After 15 mins turn all the pieces and cook it for another 15 mins or until it turn brown.
  7. Serve hot with tomato ketch up or honey mustard sauce.

Beetroot Halwa

This is my first blog, so wanted to start it with a Sweet:) Here u go - Beetroot Halwa (பீட்ரூட் ஹல்வா) - one of my all time favorite.

Ingredients:
  1. Beetroot                      - 250grams
  2. Sugar                          - 200grams
  3. Ghee                           - 50grams
  4. Cashew                       - 10  (finely chopped) 
  5. Cardamom (Elachi)      - 5 (powdered)

Method:

  1. Wash, peel off and grate the beetroot.

  2. Add 1 spoon of ghee in a thick bottom pan and heat it.

  3. When the ghee starts melting ,add the finely chopped cashew nuts and roast (medium flame) till it turn into golden brown colour. Keep this roasted nuts aside.

  4. Now add the finely grated beetroot in the pan and stir it till the beetroot is completely cooked and the water is absorbed.

  5. Add sugar at this stage.Keep the flame in low and stir it till they are well blended.

  6. Add remaining ghee and heat the mixture for 5 mins. Sprinkle cardamom powder and switch off the flame.

  7. Transfer it to a serving bowl and garnish it with roasted cashew nuts.
